Okay – so if you have ever eaten at Red Lobster, you know just how good the biscuits are! They taste like butter with some things added just so you aren’t eating a stick of butter. Well.. here is a gluten free recipe for a copy cat of those Red Lobster Biscuits, and trust me, they taste good with more than just seafood!
3 Tbsp unsalted butter, melted
½ Tbsp garlic, minced
2 cups Bisquick gluten free baking mix
¾ cup reduced-fat, shredded sharp cheddar cheese
½ tsp garlic powder
1 tsp Italian seasoning
2 cup cold water
Preheat oven to 400 degrees. Line a baking sheet with parchment paper or spray baking sheet with non-stick cooking spray.
Melt butter in a small bowl in microwave or over low heat in a small frying pan. Once butter is melted, add ½ Tbsp minced garlic and sauté for 30 seconds to 1 minute. Remove butter and garlic from heat and add parsley. Set aside.
In a medium bowl, combine Bisquick baking mix, reduced-fat cheddar cheese, garlic powder, and Italian seasoning. Add cold water and mix just until mixed. Drop batter by heaping tablespoons onto prepared baking sheet. Biscuits should be doughy.
Bake for 8 minutes. Remove and brush or drizzle garlic butter and parsley onto biscuits. Bake for 5-6 additional minutes until biscuits are golden brown.
