Creamy Turkey Mushroom Casserole

2 tsp olive oil
1 onion
3 cloves garlic
1 lb ground turkey
1 cup frozen mixed vegetables (peas, corn, carrots, beans)
Pacific organic condensed cream of mushroom soup (also gluten free)
1/4 cup milk
1 box Gluten free macaroni (Catelli).
Shredded mozzarella or one package 4 cheese Italiano cheese

Cook macaroni according to a package instructions. Drain and set aside.

In a deep non stick pan, cook onions and garlic in oil.  Once onions are translucent, add ground turkey and cook through. Once cooked through, add mixed vegetables and cook through.creamy_mushrooms_casserole___1__720-1Add cream of mushroom sauce and heat to a boil.creamy_mushrooms_casserole__720creamy_mushrooms_casserole___1__720Add milk. Add pasta and heat through. Add a sprinkle of cheese through the pasta and stir so that each bite will be cheesy.

Pour into a lasagna style baking pan.creamy_mushrooms_casserole___2__720Sprinkle with remaining cheese.creamy_mushrooms_casserole___3__720Put into the oven at 400 degrees for 20 minutes or until cheese is brown on top.  Serve and enjoy!

This is a huge kid pleaser. They love this casserole. For variation add mushrooms with the vegetables.
